Distillers' Tasting Notes Appearance - Rich amber. Predominant Flavours - Honey like with notes of custard and sherry. Hints of autumn fruits, pears, apples and plums. Secondary Flavours - Cinnamon and nutmeg spiciness, creamy with a slightly nutty earthiness.

This single malt is from the Knockdhu distillery. It is non chillfiltered and bottled at 46% abv. Bottled in 2007, this version is full bodied with a slight peatiness with hints of sweet vanilla and toffee.

The latest in the series of six, the new 2009 release limited edition 17 year old finished in Madeira casks. The Madeira wood has exceptionally rich luxurious aromas translating into an equally rewarding flavour of spice and dried fruit.

Nose: Gentle floral aroma with hints of violet and lavender. Delicate smoke beautifully balanced with honeyed vanilla and spicy oakiness Taste: Prominent smoke softens to reveal oaky honey and vanilla. Cinnamon and nutmeg develop with time
Finish: Sweet and spicy with a hint of smoke- A marriage of whiskies finished in heavily peated casks & new American oak barrels In 2001, a heavily peated batch of barley was bought from a local supplier, distilled & allowed to mature. To rejuvenate the maturation process the whisky was transferred to newly treated traditional casks. Until filled with 17yo Balvenie for a short period, the result was an intensely peaty whisky Married with Balvenie finished in new American oak casks produced a rich & spicy malt with layers of smokiness. The intention was not to emulate a traditional Islay style, but to explore the impact on aged Balvenie. This limited edition expression will be released over a two year period with a second bottling in 2011.

Classic Balvenie aged in traditional bourbon casks then finished in Portuguese port pipes, giving a deep rich, full flavoured whisky, and good balance with a long, dry finish on my top ten of all time greatest whiskies

Balvenie Single Barrel 25 yrs 29.95

Distilled in 1974. Unchillfiltered, each bottle is hand filled. The nose is quite sweet, honeyed, oaky whisky with a fruity bouquet. Hints of butterscotch and toffee flavours with a long, dry finish. Classic stuff! Extremely rare and hard to find anywhere.

From a single cask. Distilled in 1976 and bottled on March 27, 2008. Bottle number 24 out of a limited edition of 231. Rich and golden in colour. Rich complex fruity aroma with distinct citrus notes. Hints of summer blossom and fresh honey are enveloped with gentle oak notes. Silky smooth with a rich velvety texture, its taste is sweet with flavours of oranges, peaches and apricots and honey and vanilla are overlaid with spicy oak and a hint of beeswax. The finish is exceptionally long, sweet and warming~ Malt master's notes.

Distilled in Oct. 1981 and bottled Oct. 2007, a 26 yr old treat. Unchill filtered, no colour added, bottled at natural strength. Strong resins of European oak, fresh tea, aldehydes, demerara sugar. An excellent sherry wood whisky, slightly peppery with a fresh taste and long subdued finish, wonderful. A great sherry style Highland dram.

Undiluted Nose: Citrus fruits - oranges and lemons with a soft fruit element also present. Delicate floral aromas and a spicy earthy note. Palate: Sweet and spicy with cedar wood developing late. Subtle citrus fruitiness developing late. Diluted Nose: Floral note more dominant now and the soft fruit element remains. A little toffee and vanilla sweetness.
Palate: Hints of smokiness, charred oak and cinnamon. A rich fruit flavour developing. Body: Clean and fresh. Finish: Sweet, spices with a little fruitiness.

Nose: Complex, rich mix of flowers, fruit (dried and caramelized), plum, baked apple, currant, honey, roast chestnut, meat and toffee. Palate: A soft start, then dark fruits mixed with light honey and cooked peach. A rich, elegant, silky texture that fills the mouth. Highly complex. Finish: Soft with a gentle hint of smoke. Balances richness and fragrance superbly- Diageo Notes

Nose, Sweet malt, hay, and wet grass. Porridge character a bit of exotic fruitiness. Palate: Lots of malt, Refresher sweeties, some sulphury grassiness and fruit cocktail. Finish, Dry and chalky.

Glen Garioch 15 yrs 7.95

Mint, sage, notes floral, the palate is quite rich and spicy, a very hot finish lots of spice and peat 15 year old East Highland malt from Aberdeenshire. A very drinkable highland style whisky with lots of varied flavours. I like the old fashioned packaging, which reminds me of the days when all malt whisky was covered in tartan.

Glen Elgin 12 yrs 14.95

Nose, Almonds, or marzipan? Some orange juice. Perhaps a trace of sawn wood. With water, Speyside esters, nut oil and buttery fat, prawn crackers, traces of fresh pears; a whiff of smoke or steam; dense. The maturation of this 1996 Distillers Edition is finished on Muscatel sherry casks, which leaves a unique character on the whisky's flavour: there's an immediate burst of sweetness reminiscent of dessert wines and white grapes, followed by the peaty impact of the whisky's full-bodied palate. Citrus, nuts, dried fruits, sherry, grapes, the flavours just keep on coming. The alcohol, at 43% a bit above average, leaves a light sting on your tongue, and the peaty aftertaste

Here's the official tasting notes: Colour:  Bright gold. Nose:  At bottling strength, a soft toffee sweet, faintly spicy flavour counterbalances the trace of delicate phenols and fruit.  There is an all encompassing smoothness when these are all brought together. Adding a touch of water allows the seaweed and salt to come through but not enough to overpower the vanilla and honey sweetness with just a trace of new mown hay and peat at the finish.

Body:  An intense depth that is exceptionally balanced and warming. Taste:  An instant warming tang of smoke that fades into smooth floral scents and blends seamlessly into an oaky nuttiness and leaves a lasting sweetness on the taste. With a touch of water the peaty warmth fills the mouth but does not overshadow the sweet chocolate smoothness. This is balanced by the rich toffee taste and slowly fades into a delicate hint of heather and peat smoke. Finish:   Full bodied, long with a luxurious oily smoothness.

Laphroaig Cairdeas 13.95

Every year, Laphroaig makes its Feis Ile (Islay Whisky Festival held annually in May) bottling available for the Friends of Laphroaig. This year's release is tagged "Master Edition" because it's created by the Master blender Robert Hicks. The recipe is 50% of bourbon hogsheads (11 years old) and 50% of first fill bourbon (15, 17 and 19 years old). Colour: Bright gold Nose: Spicy smoke, bacon and seaweed, a hint of citrus fruit. Palate: Sweet peat, salt, cloves, adding water unveils mixed citrus fruit and pepper. Finish: Very long and peaty with a salty finish.

Laphroaig Quarter Cask 7.95

Burnt toast, dry medicinal character, and sweet vanilla. Palate smoky cereal notes, dry, smoky, peaty. Finish smoky and pepper A vibrant young Laphroaig whose maturation has been speeded up by ageing in Quarter Casks. This shows soft sweetness and a velvety feel when first tasted, then the intense peatiness so unique to Laphroaig comes bursting through. A really terrific whisky and great value.

Port Ellen 25 yr 29.95

Port Ellen distillery closed in 1983, a rare opportunity to sample a classic Islay. Distilled in 1978, and one of only 5100 bottled in 2004. The abv is 56.2 % cask strength. This is a distillery bottling not an independent. Nose, citrus fruits (lemon), iodine and peat with a background of smoke. Taste complex, between peat smoke and hazelnuts, hints of chocolate. Finish hints of dried fruits and spices long and rewarding

Smokehead Islay Single Malt 5.95

No age statement. Nose heavy and peaty, body, hints of cocoa, peat, honey sweetness and a peppery spiciness. Finish is light and sweet Smokehead is the name of a 'mystery' single malt from Islay bottled by Ian MacLeod distillers.  The packaging and entry-level price of the malt are targeted at younger arrivals to the malt scene, with the emphasis on the malt's peaty characteristics.  There has been frequent speculation as to the identity of the malt in Smokehead, with guesses ranging from the interesting (heavily-peated Bunnahabhain) to the highly unlikely (young Ardbeg or Lagavulin).  In reality, very few people know the true identity of the distillery which supplies the stock for Smokehead - and those who do aren't telling!

Highland Whiskies

Aberfeldy 12 Yrs 5.95

Colour: Warm Gold. Nose: Rich, perfumed aroma, rounded and full with heather, honey, notes of sweet pineapple, butter toffee, toast cereal and vanilla.
With water, more honey appears, with a subtle hint of toffee apple.
Palate: Great depth, sweet golden syrup and honey followed by spices and orange peel. With water, the palate becomes creamier with more light fruits, vanilla notes and the faintest wisp of smoke. Balblair 1975 34.95

Matured entirely in ex-Sherry casks, Balblair 1975 has a very attractive nose of rich, spicy fruitcake, Sherry and toffee. The palate is surprisingly lively, with Sherried sherbet notes, fondant creams and developing background smoke. The finish is long, with persistent Sherry and figs, drying steadily to oak. 46.0% ABV, a Gold Medal winner at the International Spirits Challenge 2008, this also won top prize in its category at the World Whisky Awards 2010.

A blend of single grains very nice cold or on the rocks The Snow Grouse has a slightly metallic nose, with developing vanilla, ginger and peach. The palate is pleasant, without being highly flavoured, with clean cereal notes and fresh fruit which lingers through the medium length finish. Sampled from the freezer, there is an inevitable increase in viscosity, and while some of the characteristics of aroma and taste and dulled, there is a pleasing vanilla spiciness, and this is certainly an easy to drink whisky which would also make an ideal cocktail base.

Nose: Strawberry jam, pineapple and apples. Some forest floor (earthy and leafy), but only in small quantities. Palate: Blackcurrant and strawberry jam, in a sweet Victoria sponge. Very sweet and confected, but not in a nauseating way and underpinned with a little malty, cereal character. Finish: More sweetness.
Overall: Another success…it walked that fine line between jammy and cloying, just about staying on the right side. A slugger.
